Nice! I have a family “fruitcake” I make several times a year… thinking of changing the name as to not get the negative reaction to “fruitcake”! Great with espresso, sharp cheese, goat cheese!

Should the nuts and/or seeds be raw or roasted? Salted or not? I used roasted, salted seeds (sunflower and pumpkin) and left out salt because of that but it seems under-salted (but still delicious!).

Do you think that a tea loaf pan (or a short Pullman pan) would work with this recipe for making smaller “cocktail loaf” slices to serve along with cheese?
