Dorie, Thanks so much for your recipe of rough puff! I can make full puff pastry, but sometimes I just don’t have the time it takes. I’ll be making some tomorrow! I have one small comment. In your Printable version, there is a typo. In the DIRECTIONS section, the first sentence says “Place the all-purpose dough...” instead of “Place the all-purpose flour...”. It’s correct in the full recipe instructions. Thanks for all you do to enrich so many peoples’s lives with your wonderful recipes and stories!

Hi Dorie, yes please, the apple tart recipe. I'm a big fan of galettes. Also, do you have a recipe for macarons? I'm having a baking date with a friend and we're going to make them. Hopefully at least a double batch.

I, too, love galettes! Take a look at the recipe for macarons in my book, BAKING CHEZ MOI. Lots of people have been very successful with it. Have fun! xoD

Love a Ruff Puff! I use mine for a Gascon croustade filled with apples, prunes or other seasonal fruit and heavily dusted with coarse French sugar.

Kate, of course you make a Gascon croustade with the dough - it's a "hometown favorite" for you. I bet your croustade is delicious - xoD

I'm eager to try this rough puff pastry, although I haven't decided to go sweet or savory. Just really want to make the dough!

The fun of the dough is that it'll be excellent whether you choose sweet or savory. Also, the recipe makes a little over a pound of dough - you might be able to make one of each! xoD

I think I will! One small tart with pears, one small-medium mushroom quiche.

Any chance this would work with GF cup 4 cup?

I haven't tested this with a GF flour. If you make it with cup 4 cup, please let all of us know how it goes - xoD
