Of all the perfect, incredible DG recipes I’ve had and I’ve made (also the ones I haven’t quite gotten to), the fact that there’s one that wasn’t quite right…is totally acceptable and understandable. I suspect it’s God’s Way of telling us that even DG is only human. Which is debatable.
You’re probably not still waiting, but I hope you were able to find an answer out there! Dorie uses the standard 1 cup flour = 4 3/4 oz = 136 g, but you’ll see variances a few grams (and it’ll still be great) either way.
Dorie thank you for posting the errata. I have a question about some of the gram measurements in the book. For instance, the Galette Dough says 1 ½ c of APF=204 g but KAF & others says it should equal 180g. Please advise as I use Grams & weigh scale in all my baking
There's no exact set weight for 1 cup of flour. Therefore, you'll see differences among bakers. An author will often write in the introductions of their books what weight they follow for 1 cup of AP flour. But you'll always see slight variations among books and resources.
I love how your crust looks, that is going to be my goal for my Thanksgiving pie, flavor TBD (pumpkin is already taken).
