I’m just back from my hometown of Brooklyn NY where I ate a lot of the Caribbean food I miss so much. At the Aperolympics I’d have been happy to represent Jamaica with some jerk chicken wings, or Cuba with pernil, or Trinidad & Tobago with doubles!

I'd have chosen to represent El Salvador - my husband's home country and my adopted one - and taken a variety of pupusas - beans and cheese, cheese and garlic, greens and cheese, and pork and cheese (there is a theme here, no?) It'd be such a fun party!

It is!! There several good recipes on line. All ingredients are chopped fine and cooked slightly. Boiling water and the bughlour iare added without further cooking. Spices, cayenne and lemon juice are added. Let it rest. Can be eaten warm or cold.

What a fantastic idea for an Olympic party! Themed parties are so much fun. I’d have chosen Italy - my mother’s side of the family hails from Bari and Calabria. I’d make a large platter of grandma’s filled cookies. Unfortunately no one know the name of these traditional Italian cookies made with an olive oil and wine dough, then rolled out like ravioli, stuffed with a mix of nuts and blackberry jam, baked then dipped in honey. If anyone knows the name I’d sure love for you to share. 🇮🇹

I used to do a mean Bubble and Squeak. I'd make a whole roast beef dinner just to make leftovers! So, I would choose Great Britain and Bubble and Squeak! Oh, and some Scottish shortbread for dessert. I make a mean shortbread, too!

What a great party! I would have picked Turkey and bring “yaprak sarma, a.k.a. dolma ”, grape leaves stuffed with rice, cooked in olive oil😋

Wonderful idea for an amazing party! Going to get some friends together to have Apero’lympics for the closing ceremonies.

Terrific fun! I love French food, so France all the way! I think I would have brought my “famous” roast chicken. And I’m still rewatching Celine and crying every time I watch. The courage, poise, and grace she exhibited, not to mention the way she performed the iconic song, was unforgettable.🇫🇷❤️

I’d have chosen Finland and make a couple of my Mom’s comfort food dishes. First as an appetizer, I would make pea soup, puréed, served warm in shooter glasses and with some finely diced ham on the side to sprinkle on as a topping. Then for after dinner, I would make Pulla (Finnish Cardamom Bread) served with coffee of course. A cup of coffee with a slice of Pulla spread with some wonderful French butter and one of Sophie’s chocolate chip cookies would make a sweet ending to her Apéro’lympics!

Sandra, I bet Sophie and her friends are sorry that you weren't at the party. I love Pulla and you've reminded me that I have recipe for the bread in an old notebook. Many years ago, a young boy from Finland stayed with us for a few weeks and as thank you, he made Pulla and gave me his recipe. Off to search for it - xoD
