Fascinating flavor combinations! I adore apricots and also grew up eating them from cans. I make a tart from a King Arthur Baking recipe with a frangipane filling and top it with either canned apricots or canned pear halves. Fresh fruit can be unpredictable, so using canned is a great substitute. Dorie: your enthusiasm and joie de vivre is contagious and I thank you for your positivity. ❤️
I'm going to try to remember to write a post about French pastries and canned fruit - they had a long and sweet relationship. Thanks, as always, for being here, Susan - xoD
How right you are about apricots! Finding fresh, juicy and sweet apricots is pretty much mission impossible here, sadly. I make a point of eating as many as I can whenever I go back home.
This galette sounds fantastic, and the addition of rose water peaked my interest!
Oh Dorie, this is just the kind of baking that feels like summer itself: a little rustic, a little golden, and full of joy. I can practically taste the buttery crust and those sun-soaked apricots. Thank you for reminding us that simple can still be extraordinary.
thank you so much for this, Dorie! 💕💕
Thanks for writing such a good book for allowing me to share a recipe from it - xoD
Thank you for the shout out Dorie! xx I love this book; it's so summery and helps me deal with my pie anxieties.
Double love - love your Substack and love this book - xoD

Rose and apricot - two heady, but compatible perfumes - xoD
Just told my daughter the other day I wanted to make a galette soon!
I love when things work out like this - xoD
Immediately planning to make this galette for a picnic on Saturday!
You’re going to love it! xoD
Hi Dorie,
I am in Paris right now; we saw the lights on the Eiffel Tower last night. We also saw the Olympic balloon from the taxi window.
A brief note: Taxis are wonderful. We are
80 years old and walking Paris is great until you must find a taxi !!! Love, Drina
Yes, I have your cookie, tart cookbook
and will look at cakes.
One of the best summer desserts out there!
